The elapsed time has different effects in fruits and woods. One of the most common effects is the loss of rigidity or internal weakening. However, this feature cannot be verified to the naked eye, it requires the use of tactile testing, this test is mostly cualitative instead of cuantitative. In this work, a review of non-destructive experimental methods to measure physical and mechanical properties in fruits and woods is presented. That allows to determine its maturity grade and to estimate the right time for the harvest.
