The invention discloses a preparation process of crystal bacon, which comprises the following steps: unfreezing and cleaning are carried out; dietary alkali is added into water with the temperature of 50 to 60 DEG C, the pH value is regulated to 10 to 12, pigskin is put in and soaked for 5 to 10min, and flushed by water; water is added into a boiler and is boiled by big fire; seasoning is put in, the big fire is changed into slow fire, and the pigskin is put in and cooked for 50 to 70min; lump bacon is added in and cooked by big fire for 2 to 3min, and then is cooked by slow fire for 40 to 60min; and then tasteless jelly powder is added in, cooked by big fire and stirred until being boiled, and the heating is stopped; the bacon skin in the boiler is taken out and paved at the bottom of a container, bacon lumps are fished out, put into the container and arranged on the bacon skin; the soup in the boiler is poured into the container to submerge the bacon lumps; the bacon skin is covered on the top layer; and the product stays still and is sliced. The preparation process of the crystal bacon comprehensively uses the pigskin, bacon edge material and the like produced in a bacon production process, saves the cost and increases the benefit, so that the crystal bacon has good taste and flavor.
