Powdered composition for preparing cheese dairy free

The present invention relates to a powder composition for preparing free cheese dairy. Said composition comprises a combination of flour of legumes, phosphate hydroxypropylated starch, tapioca flour, carrageenan, locust bean gum and lactic acid. It also relates to the use of said composition for preparing free cheese dairy, to a process for preparing free dairy cheese, the free cheese dairy products comprising the composition of the invention and a food product comprising the cheese exempt of dairy products.
