Development of an electrochemical sensor array for determination of food analytes

With modern techniques of sensor fabrication and the processing power of modern microelectronic, sensors can be conferred a degree of miniaturisation and integrated into a small portable devices to allow in situ real-time monitoring. We report here the development of a multi-analyte electrochemical sensor array tailored to monitor the quality of fruits of economical importance to tropical countries. The array sensor has the ability to simultaneously monitor a range of food quality indicator analytes offering a robust analytical output. For this work, one-shot array sensors were mass fabricated using screen-printing (thick film) technology.
