The invention discloses a preparation method of instant rice with a quick water regaining function, belongs to the technical field of food processing, particularly relates to a mechanical compaction and hot air drying combined treatment technology, and is used for finally obtaining the instant rice short in water regaining time and good in mouthfeel and flavour. According to the preparation method, rice subjected to preliminary screening is taken as a research object; the rice is soaked, steamed, dispersed and compacted, and then is quickly dried, and finally cooling-packing is performed. Rice grains are shaped by adopting a compaction method, the drying rate of the rice grains is quickened, an instant rice processing process is greatly simplified on the premise of keeping the quality of the instant rice, and the production cost is lowered; the preparation method is scientific and reasonable in process, simple and convenient to operate, large in production quantity and short in production cycle, and the economic benefit is good.
