Physico-Chemical Studies of Vitamin-C in Aqueous 2-Propanol: Manifestation of Molecular Interactions

The apparent molar volume (ϕ V ), viscosity B-coefficient, and molar refraction (R m ) of l-ascorbic acid have been determined in (40, 60 and 80 mass%) water and 2-propanol solutions at 298.15, 308.15 and 318.15 K from density (ρ), viscosity (η) and refractive index (n D) measurements, respectively. The limiting apparent molar volumes (ϕ V 0 ) and experimental slopes (S V * ), derived from the Masson equation, have been interpreted in terms of solute–solvent and solute–solute interactions, respectively. The viscosity data were analyzed using the Jones–Dole equation and the derived B-coefficient has also been interpreted in terms of solute–solvent interactions in the solutions. R m has been calculated using the Lorentz–Lorenz equation.
