Simulación numérica en estado no estacionario de espárragos durante el proceso de esterilización

The proposed numerical model determines the temperature distribution in convectively heated liquid brine and in conductively heated asparagus during in-can sterilization. The predicted results obtained by using this method are compared with experimental results.
