Conversion of L-Isoleucine into 2-Methylbut-2-enyl Esters in Apples

Abstract Intact 'Golden Delicious' apples (Malus × domestica, Borkh.) were infiltrated with a L-isoleucine solution to investigate its conversion into volatile esters. It was found that the L-isoleucine treatment caused an increased production of 2-methylbut-2-enyl esters, especially rite acetate ester, but also of ethyl 2/3-methylbutanoate, 2/3-methylbutanol and most 2/3-methylbutyl esters.
