The invention relates to wheat germ fin dried noodles and a production process thereof, and belongs to the technical field of production of the fine dried noodles. The wheat germ fine dried noodles are prepared from 200-300 parts by weight of flour, 1.5-2.5 parts by weight of salt, 0.1-0.15 parts by weight of sodium carbonate, 0.05-0.15 parts by weight of konjac powder, 15-25 parts by weight of wheat germ and a proper amount of water. The wheat germ fine dried noodles is advantageous in that noodles capable of being taken as a principal food is prepared by adding the wheat germ and the konjac powder into the flour, so that the fine dried noodles has the nutritional value of the wheat germ, and tastes smooth and delicate; and the production process is simple.
