The invention relates to the surimi deep processing technology and in particular relates to a roasted surimi product with excellent mouthfeel and visual effect and a preparation method of the roasted surimi product. The preparation method comprises the following steps: (1) preparing color paste; (2) preparing paste; (3) coloring; (4) filling a mold; (5) cooking; and (6) demolding. The prepared roasted surimi product has fresh, tender and delicious taste and high resilience in mouthfeel, is rich in protein, has high nutrition value, has bright color, real shape and novel visual sense, has fish flavor and fish appearance, and meets the domestic market consumption demand, and the preparation method is a new production process in the food processing field of quickly-frozen conditioned roasted fish products.
