The invention discloses a torque control method and device of an electric driving system. The torque control method comprises the following steps: obtaining the maximum driving power and the maximum generation power of motors in a system mode; if in a motor limiting mode, determining the maximum torque of the system to be the sum value of the maximum torque of the motors in the system mode, and determining the minimum torque of the system to be the sum value of the minimum torque of the motors in the system mode; if in an energy source limiting mode, determining the maximum torque and the minimum torque of the system based on the torque of the motors in the system mode; determining the torque of the motors based on the power of the motors, determined by distribution rules, wherein the distribution rules record the corresponding relationship between the usable maximum power as well as the usable minimum power of the system and the power of the motors, so that the maximum torque of the system and the minimum torque of the system are determined in real time. For an electric drying system comprising a plurality of motors, when a vehicle runs, the torque capabilities in different system modes are obtained, so that the appropriate and accurate arbitration are provided for the demands of motor torque, and the reference for the explanation of demands for torque, the gear selection, and the selection of vehicle running modes, and the like is provided for a driver.
