Resistant starch is a new developing concept.Like food fiber in metabolism,resistant starch plays a very important role in lowering diabetics' blood sugar concentration after meals,maintaining body weight,controlling intestinal disease and lowering blood lipids.Resistant starch is a white and unscented multiple-hole powder with a small molecular structure,which is divided into four types: RS1(physic investing starch),RS2(resistant starch granule),RS3(retrogradation starch) and RS4(chemical modified starch).The resistant starch content is determined by amylose content,amylopection content and gene type.The rice variety with high resistant starch content can be bred through screening mutants.
