Inhibitory Effects of Dietary Leafy Vegetables on Mutagens and on Active Oxygens

Epidemiological studies have made it clear that cancer is closely related to dietary factors, and the incidence of cancer of various organs is inversely related to estimated amounts of vegetable consumption. Initially, we screened approximately eighty different edible plants and found that antimutagenicity against furyl furamide (AF2) was widely distributed in vegetables.
