PENGARUH SUHU PENGERINGAN TERHADAP KARAKTERISTIK FISIKOKIMIA PATI BIJI LOTUS (Nelumbo nucifera)

This study aims to determine the effect of drying temperature on the physicochemical properties of lotus (Nelumbo nucifera) seed starch. This study used a randomized block design for parametric statistical data analysis, if it has an effect, it will be continued with an honestly significant difference test (Tukey test). This research was carried out experimentally in a laboratory with the drying temperature difference treatment consisting of 3 levels (temperatures 45 ⁰C, 50 ⁰C and 55 ⁰C) and repeated 2 times. The parameters measured consist of physical analysis (yield, white degree, and granule shape) and chemical parameters (moisture content, ash content, starch content, and amylose content). The results showed that the difference in drying temperature had a significant effect on whiteness, moisture content and starch content of lotus seed starch, but had no significant effect on yield, ash content, and amylose content.
