L'integrazione con vanadio delle razioni per suini all'ingrasso: effetti sui prosciutti stagionati
2003
The Authors refer the results of a trial carried out with the aim to value the quality traits of seasoned hams from heavy pigs (slaughter weight 160 Kg) feed with ration integrated by vanadium from oxide (V:55%) at the doses of 5 and 10 p.p.m. for the entire cycle. At the doses vanadium positively affected the seasoning yield (resp. 5,00% and 13,00%), the yield of saleable sliced ham as percent of seasoned ham (resp. 5,50% and 7,00%) and some quality traits of the meat (digestibility and tenderness) was not a source of variation for the chemical composition and meat colour.
