The invention discloses a sprouted grain fermentation selenium-rich dietary eight-treasure porridge and a preparation method of the dietary eight-treasure porridge. The sprouted grain fermentation selenium-rich dietary eight-treasure porridge comprises selenium-rich Chinese yam, water shield, bamboo shoots, selenium-rich black fungus, selenium-rich mushrooms, mung beans, red beans, selenium-rich rice and buckwheat in certain proportion. The preparation method comprises the following steps: (1) selecting food materials, and weighing the raw materials; (2) compounding the mung beans and the red beans, soaking and grinding to obtain coarse grain pulp rich in amylase, cellulase, protease and glucoamylase; (3) cutting the selenium-rich Chinese yam, the water shield, the bamboo shoots, the selenium-rich black fungus and the selenium-rich mushrooms into piece, grinding, mixing, adding the coarse grain pulp into the mixture, and carrying out enzymolysis; (4) after enzymolysis is finished, adding saccharomycetes for diluted fermentation to obtain a sprouted grain yeast; (5) after fermentation is finished, evenly mixing, filling and quick-freezing; (6) sterilizing and cooling to obtain the sprouted grain fermentation selenium-rich dietary eight-treasure porridge. The sprouted grain fermentation selenium-rich dietary eight-treasure porridge is reasonable in formulation and convenient to use, can be easily absorbed by a human body, and is rich in nutrition and unique in flavor.
