ADVANCES OF RED KOJI AND ITS SAFETY

Taxology of Monascus spp and its some metabolized productions are summarized in this article, the properties and functions of red-pigment, monacolin k, γ-amidocyanogen butyric acid, ergosterol and other physiological active components are introduced, safety of koji is also discussed.
