Nowadays the head of adult sheep can regularly be found on the market and it is eaten by immigrants of the islamic religion. The survey was carried out in two sheep slaughterhouses in Piedmont. In order to evaluate the microflora, bacteriological examination were carried out on sheep brains regularly slaughtered. The main microbial groups were counted and the potentially pathogenic microbial species (Salmonella spp., Listeria monocytogenes) were examined more carefully. We consider this food with some suspicion, because the culinary preparation is made following traditional recipes that exclude any intervention of health education.
