Evaluación de la calidad microbiológica en helado de yogur

The microbiological quality has been evaluated in 170 samples grouped in 2 batches of yoghurt ice-cream. The following determination was carried out: mesophilic aerobic bacteria, coliforms, Escherichia coli, pathogenic staphylococci, Salmonella, Shigella and Listeria monocytogenes. The results obtained showed an acceptable microbiological quality.
