Estudio etnográfico de la bebida tradicional Zende en la comunidad San Lucas, Amanalco Estado de México

Objective: To carry out an ethnographic study of the consumption of the traditional drink zende. Methodology: Through a mixed approach, a structured survey was designed with qualitative and quantitative variables, which was applied with a selective sampling to two hundred and eighteen inhabitants of the San Lucas community, belonging to the municipality of Amanalco de Becerra, State of Mexico. Results: Shows that zende is a gastronomic element for the region, due to its elaboration and relationship with religious or civil festivities where cultural traditions and practices have been modified, losing presence in the community due to new ways of eating. Limitations: There is not enough information regarding traditional Mexican drinks. Conclusions: Mexican cuisine is a social expression, characterized by the ethnic groups settled in the Mexican Republic, with ethnographic studies it is identified, lifestyles in food practices, an example is zende; Pre-Hispanic drink based on fermented blue corn, originally from the culture.
