Nyamplung seed (calophyllum inophyllum) contain high phospholipid.
Utilization of nyamplung seeds as an alternative for lecithin resource can reduce
the use of soybean based lecithin, therefore it can increase the added value of
nyamplung.The objective of this research was to characterize functional properties
of the nyamplung phospholipidthat was obtained from fractionation using ethanol
and acetone.
Extraction of nyamplung oil was performed by solvent extraction method
using a mixture of chlorofom and methanol (1:2 v/v). Phospholipid was separated
from crude oil by solvent extraction using methanol. Fraction which was soluble
in methanol, was polar lipid and phospholipid. Furthermore, phospholipid in
methanol fraction was fractionated using ethanol and acetone.
Crude phospholipid fraction had the lowest value of peroxide (4,08
mek/kg). The highest HLB value (8,4) was obtained on ethanol-soluable fraction.
Ethanol-soluble fraction has the best characteristic of EAI value (103,8 m2/g) and
ESI (38,05 minutes) on oil in water emulsion system,emulsion viscosity (42 cps),
and color (L = 28.,8
