The aim of this study is to analyze the culinary context of the parish of Sangolqui, located at Ruminahui canton through key location factors which has an influence in the development of any kind of touristic activity: physical – natural, socio – economic, political – administrative, and culinary – commercial production. It is being considered three research methods to get the information and its analysis: bibliographic, quantitative and interview. The main result was a low impulse of the culinary development related to culinary – commercial production, even though it is located in a high – quality, cultural, and natural place. This situation mainly comes from the difficulty to access to it, or the inadequate infrastructure that some food and beverage establishments have for offer high - quality products. However, factors like:  physical – natural, socio – economic, and political – administrative turn out very positive for its development, evidenced in certain sectors.
