The invention discloses a high fibre mooncake which comprises the following raw materials by weight: 60 to 70 parts of flour, 10 to 12 parts of glutinous rice flour, 8 to 10 parts of potato, 6 to 10 parts of laminaria japonica, 1 to 2 parts of yoghurt, 5 to 10 parts of vegetable grease, 30 to 40 parts of shrimp meat, 20 to 30 parts of corn, 6 to 10 parts sweet potato, 3 to 4 parts of porphyra, 1 to 2 parts of apricot flesh, 1 to 2 parts of pericarpium citri reticulatae, 1 to 2 parts of rhizoma atractylodis, 1 to 2 parts of wild chervil leaf, 1 to 2 parts of dragon's tongue leaf, 1 to 2 parts of hemianthus micranthemoides, 2 to 3 parts of hance brandisia herb, 1 to 2 parts of walnut powder, 1 to 2 parts of pecto-cellulose,1 to 2 parts of oat cellulose,1 to 2 parts of corn cellulose and 20 to 30 parts of water. The mooncake prepared by the invention is soft in skin, avoids the fracturing phenomenon, is rich in taste, and has a very high health caring value, wherein the shrimp meat contains rich magnesium; magnesium has an important regulating function on cardiac action, can protect the cardiovascular system well, reduce the cholesterol content in blood, prevent arteriosclerosis, and meanwhile expand coronary artery, and is in favor of preventing hypertension and myocardial infarction.
