Study on scavenging free radical capacity of Salvia splendens pigment

The antioxidative activity of Salvia splendens red pigment was investigated by scavenging capacity to hydroxyl radical generated by Fenton reaction and to superoxide anion generated by a pyrogallol autoxidation system.The result show that Salvia splendens red pigment has strong ability of scavenging capacity to hydroxyl free radical.Salvia splendens red pigment is more potential and higher valuable Natural pigment.
