Diacetyl is the sign of the maturity of the beer in fermentation process,however,in the actual production process,it often appears that fermentation liquid of diacetyl reduction is normal and fermentation process is abnormal;total diacetyl is the sum of diacetyl and its precursor,determining the total diacetyl can better ensure normal fermentation.This distillation method determines total diacetyl in fermentation liquid or beer,formulating the standards that diacetyl and total diacetyl are not greater than 50μg/L and 100μg/L in 0℃ fermentation liquid respectively,which can effectively control the fermentation process.The method can accurate determine the content of total diacetyl in beer,is able to effectively control the content of diacetyl as well,and is worth promoting and applying.
