The invention relates to methods of extraction of an unsaponifiable fraction of a renewable raw material, comprising the reactive trituration of the first dehydrated material in the presence of at least one polar organic solvent comprising at least one lower alcohol, at least one immiscible cosolvent apolar with said lower alcohol and at least one catalyst, thus yielding a polar organic phase enriched in functionalized lipids by one or more functions chosen from hydroxyl, epoxide, ketone, thiol, aldehyde, ether and amine, and an apolar organic phase enriched in lipid containing no or few hydroxyl, epoxide, ketone, thiol, aldehyde, ether and amine, and then the concentration of the organic phases.
