The present invention discloses a method for manufacturing a high quality surimi dough, the dough material (in the total mass of all the raw materials as 100%) is: 40% to 70% of minced fish, potato starch, dry over 5% to 50% starch 0% to 40%, 0.3% to 1.5% salt, 0.1% phosphate compound to 0.5%. The production process is as follows: (1) surimi kneaded in a vacuum space, the salt kneading, a suitable amount of potato starch and the ultra-dry modified starch materials continue kneading, to ensure uniform mixing raw materials under vacuum, sufficient; (2 ) the mixture was kneaded surimi dough pressing molding, surimi made uniform dough thickness. Making use of the present invention has a high nutritional value surimi dough, smooth taste, Naizhu good. Prepared by the invention may be used to produce surimi dough dumpling skin, fish skin surface and the like ravioli.
