Deteksi Salmonella sp. Pada Pempek Yang Dijual Di Sekitar Kampus Universitas Syiah Kuala

ABSTRAK Penelitian ini bertujuan untuk mendeteksi bakteri Salmonella sp. pada pempek yang dijual di sekitar kampus Universitas Syiah Kuala. Sampel yang digunakan sebanyak dua belas sampel pempek dari tiga pedagang pempek di sekitar kampus Universitas Syiah Kuala. Sampel diperiksa sesuai metode Carter. Pempek digerus dengan mortar steril dan dibiakkan di media Selenite Cystine Broth (SCB) lalu dilakukan penanaman ke dalam  media Salmonella Shigella Agar ( SSA). Selanjutnya dilakukan pewarnaan Gram dan uji biokimia. Hasil penanaman pada media Salmonella Shigella Agar ( SSA), pewarnaan Gram dan uji biokimia tidak menunjukkan adanya pertumbuhan Salmonella pada pempek sehingga dapat dsimpulkan bahwasanya pempek yang dijual di sekitar kampus Universitas Syiah Kuala tidak tercemar Salmonella sp. Kata kunci : Makanan tradisional, Salmonella sp., Zoonotic Disease, Food Borne Disease ABSTRA CT This study aims to detect Salmonella sp. in pempek sold around of  Syiah Kuala campus. The samples used were twelve pempek samples from three pempek sellers around of  Syiah Kuala campus. Samples were examined according to the method of Carter (1987). Pempek crushed with sterile mortar and cultured in Selenite Cystine Broth (SCB) media and then implanted into Salmonella Shigella Agar ( SSA) media. Then Gram staining and biochemical testing were carried out. The results of planting on Salmonella Shigella Agar ( SSA) media, Gram staining and biochemical tests did not show the growth of  Salmonella and it can be concluded that pempek sold around of Syiah Kuala campus is not contaminated by Salmonella sp. .
