Obsah biogenních aminů v pivech z českých mikropivovarů

Biogenic amines are present in fermented products, including beer. Their presence together with alcohol can be dangerous for a certain group of people. About 115 samples from 35 Czech microbreweries were analyzed for the presence of biological amines. The content of biological amines was analyzed by HPLC method. The beers were analysed immediately after purchase and then at the end best-before period. At least 2 biogenic amines were detected in each sample, and tyramine was detected in each sample. The total content of biological amines above 100 mg / l was found in 11 samples after purchase and in 14 sam-ples after at the end best-before period. Some samples may cause health complications for sensitive group of people.
