The purpose of this research was to determine the effect of air discharge on the quality of the drying process (final mass, temperature, density and moisture content), to determine the effect of air discharge on the drying efficiency, to determine the effect of residence time on the final mass results of drying and to know the effect of residence time on moisture content drying results.The drying process of Flash Dryer is a hot gas from a gas stove to heat the water heater which is fed by air produced by a blower which is exhaled through a pipeline to dry and move (transport) wet flour which has been inserted into the flash dryer through a screw conveyor and then through the hammer mill flow through a pipe with a certain height, then the dried flour is separated from the cyclone separator with the aim of separating dry flour with air. Then the flour falls down towards the reservoir.The results obtained in this test are the drying quality obtained by the smallest final mass data of 1.75 kg at 3.5 m cyclone height and air discharge 0.043 m3 / s, the biggest temperature difference is 850C at 3.5 m cyclone height and air discharge 0.043m3 / s and the smallest water content is 14.3% at 3.5 m cyclone height and 0.043 m3 / s air flow. The highest drying efficiency value is 43.6% at flow discharge 0.149 m3 / s with a height of 2.5 meters. For the longest residence time of 7.49 seconds the smallest final mass is 1.75 kg and the lowest water content is 14.3%.
