The main objective of the following project tries to rescue flavors and techniques that have been ignored through out the years by the indigenous culture in Imbabura. Ecuador with its variety of cultures and traditions should start rescuing those traditions that were part of our grandparents’ life’s . This is the main reason of this investigation that tries to rescue and combine traditional memories and cooking techniques with the modern cuisine. Imbabura’s typical foods are going to be given the right importance in this Project, it tries to make people more conscious about the importance of some of the ancestral cooking techniques and how those were the most important part of preparing the dishes to get a good elaboration and traditional flavor. We will talk about the main products and basic techniques that are forgotten now a days because of the great development in the culinary arts’ area. The traditional Ecuadorian cuisine but mainly from Imbabura will be detailed more on the next pages, that way we can understand the use of traditional cooking techniques and how they were used in the past.
