With the diversion sleeve of the big kitchen range, the flow path of a smoke gas passage is extended, and the flowing state of high-temperature smoke gas in the smoke gas passage is changed, thereby improving the flowing speed of the high-temperature smoke gas and enlarging the effective heat exchange area of the smoke gas and the nonstaple food pan so as to obviously improve the thermal efficiency of the big kitchen range. The big kitchen range capable of realizing heat compensation can be widely used in the making process of various nonstaple foods.
