Process for producing purified rebaudioside compositions using the crystallization solvent / antisolvent

Method for purifying rebaudioside A from a mixture of glycosides, the process comprising the steps of: (a) providing a starting composition glycoside comprising: rebaudioside A; and one or more of rebaudioside B, rebaudioside C, rebaudioside D I, rebaudioside E, rebaudioside F, stevioside, and dulcoside; (B) forming a solution by dissolving the glycoside starting glycoside composition in a solvent comprising: (i) a mixture of a lower alcohol and water, or (ii) a mixture of a lower carboxylic acid and water; and (c) adding an antisolvent to the solution of glycoside from step (b), in an amount which is effective to cause at least a portion of rebaudioside A crystallizes from the glycoside solution as a composition purified rebaudioside.
