The application of GC-MS on food industry

Gas-chromatography-mass spectrometry(GC-MS)technology was a perfect modern analytical methods which began in the late 20th century,and had a widely use in life sciences,environmental protection,materials,food,drug development and other fields,particularly applicable to the analysis of volatile or easily derived from compounds.In this article,to explore the development and analysis for some food by using GC-MS,the related concepts,composition,theory and performance of GC-MS were introduced,then the application of GC-MS in food industry was mainly stated.
