Packaging for probiotic beverages

Abstract Packaging probiotic beverages is unique, as the aim is to maintain beneficial microbes while preventing product spoilage. Packaging plays a critical role in maintaining the efficacy, and by extension, product promise, of probiotic beverages. This chapter begins by exploring current packaging practices in probiotic beverages. A variety of packaging materials are discussed including glass, aluminum, plastic, and carton options. Different processing and filling technologies, such as high pressure processing and aseptic processing, are explained. An investigation of the innovations in probiotic beverages follows. Active and smart packaging, such as the use of sensors, thermochromic inks and other intelligent technologies, are explored. Lastly, opportunities in sustainable packaging systems for probiotic beverages are presented.
