The invention relates to a starchy material processing method including a chemical fluidification stage and a stabilization stage, simultaneous or not, these two steps being carried out in the dry phase and by carrying respectively: - of an acid, inorganic or organic, to liquefy the starch material to a flow value in water (WF) of at least 10, preferably at least 45, and- an aldehyde compound, in particular a condensate between an aldehyde and a nitrogen compound capable of stabilizing said amylacee.L'acide material may consist, in particular a strong acid, which are preferably used at less than 0, 5%, for example around 0, 05 at 0, 4% (dry / dry). The aldehyde compound is also advantageously used at less than 1%, for example of the order of 0, 01-0, 95% (dry / dry) .The process allows to obtain in short reaction times, e.g. between 2 minutes and 6 hours, the amylaceous strongly fluidized (WF> 45) and highly stabilized (S <3, 5).
