Sustainable Utilization of Food Industry Waste and by-Products for the Production of Prebiotic Isomaltooligosaccharides (IMO)

Isomaltooligosaccharides (IMO) was produced from starch rich broken rice (BR) and potato processing waste (PPW). IMO from BR consisted of 14.15 ± 0.87 g/L isomaltose (DP2), 4.24 ± 0.18 g/L maltotriose (DP3), 38.13 ± 0.58 g/L panose (DP3), 1.98 ± 0.11 g/L isomaltotriose (DP3), 14.57 ± 0.59 g/L tetrasaccharides (DP4) and 11.51 ± 0.03 g/L pentasaccharides (DP5) accounting for a total of 92 % IMO. The IMO (92 %) from PPW was composed of 26.43 ± 0.24 g/L isomaltose (DP2), 1.89 ± 0.19 g/L maltotriose (DP3), 32.05 ± 2.46 g/L panose (DP3), 2.94 ± 0.06 g/L isomaltotriose (DP3), 9.81 ± 0.22 g/L tetrasaccharides (DP4), 8.78 ± 0.19 g/L pentasaccharides (DP5) and other higher oligosaccharides. The yields of IMO for the two processes were 0.34 kg of IMO/kg of BR and 0.1 kg of IMO/L of PPW respectively.
