Students of the undergraduate course in nutrition, by acquiring theoretical knowledge about the interaction between nutrients and human health are expected to have the most critical sense in their food preferences, The present study aimed to verify the nutritional profile of the students of the nutrition course at a higher education institution in the south of state of Rio de Janeiro. It is a qualitative research carried out with the use of a virtual questionnaire. 52 nutrition students from a private higher education institution participated in the study. The research pointed out that most students regularly and moderately eat meats and legumes, as well as avoiding excess salt, fried foods and alcoholic beverages. However, there was a predominance of carbohydrate sources and low consumption of food sources of vitamins, minerals and phytochemical compounds of interest for regulation of human health were observed. The consumption of milks and derivatives was also considered low, as well as the consumption of fish witch are important sources of nutrients. Thus, it is concluded that despite the graduation of nutrition course and presented positive responses regarding the quality of certain food groups, most still present nutritional deficiencies in their daily diet.
