The present invention relates to a process for preparing meat Sausage mushroom flavor. The preparation method of the present invention comprises the steps of: (1) Preparation of Edible broth; edible mushroom broth (2) in step (1) were prepared and concentrated to obtain a concentrated liquid edible fungus, and then the edible fungus frozen concentrate, to obtain a concentrate borneol; (3) the raw meat marinated and stranding give meat standby; (4) chopping: put the meat chopping machine, and the concentrate was added phosphate borneol, fully chopping and controls in the meat emulsion during chopping temperature of 5 ~ 10 ℃; (5) filling and kink; (6) cooking; (7) cooling. The preparation method resulting mushroom flavor meat Sausage Sausage not only help to increase the flavor and flavor, but also increase the health functions of Sausage; and the preparation method is simple, low raw material costs.
