Objective To develop a light cherry liquor.Methods With fresh cherry as raw material,a series of steps were conducted,such as blending,sedimentation,filtration,brewing and so on.Results Light cherry liquor(8) was produced.Conclusion The light cherry liquor with a red color is transparent.It possesses an elegant perfume of cherry and a suitable perfume of liquor as well as a suitable sweet and sour taste.It is pure and mild,comfortable with a distinctive flavor.Its ’hygiene criteria accords with the demand of GB2757-Hygienic Standard of Distilled Wines and Mixed Wines and the adjuvant accords with the demand of GB2760-Hygienic Standards for Uses of Food Additives.
