Qualidade microbiológica de polpas de frutas comercializadas no município de Aracaju-SE

Fruit pulp is the product obtained by crushing the edible parts of fleshy fruits, by suitable technological process. Because they are perishable, as fruits deteriorate in a few days, having their commercialization hampered at great distances. Thus, to process the fruit and freeze its pulp and a conservation method that preserves as characteristics of the fruit, and to allow its consumption during the off-season, besides allowing a diversification of flavors. The market for fruit pulp has significant growth in its commercialization in supermarkets, bars, restaurants and snack bars in the city of Aracaju, especially for the convenience of its preparation. Among the most important parameters that determine the quality of the product, it is a microbiological characteristic that allows to evaluate the level of contamination regarding the conditions of processing, storage, distribution for consumption, life and health risks of the population. In view of this context, the objective of the present study was to evaluate a microbiological quality (molds, yeasts, total coliforms and thermotolerant) of samples of fruit pulps marketed in the city of Aracaju. Thus, 27 fruit pulp samples from three different industries were analyzed, each of the companies being coded with letters: F; R; E M. Only one taste of one of the brands presented the value above the active, in relation to the total coliforms and thermotolerantes. Already as other results required by current legislation. As analyzes of molds and yeasts presented high level of contamination, meeting to the permitted standards. It is concluded that as pulps commercialized in the Municipality of Aracaju / SE are not in the process of management, leaving a desire to their microbiological quality.
