Given the choices made by consumers on a daily basis and observing the tendencies to acquirehealthy products, it is observed that there is a possibility in the market of the family farmerto promote the supply of more healthy foods through the supply and use of pequi (Caryocarbrasiliense Camb.). The objective of the present work was to demonstrate from an analysis ofaverage costs, the possibility of producing cake with pequi nut by sustainable use of pequi. Thefinal analysis allowed us to conclude that this product is technically and economically feasible.
