The present study evaluated the influence of different concentrations of a preselected adjuvant and the vacuum pressure on the filtration time and the transmittance on the clarification process of the "Chicha de Jora". The process was performed in two stages, the first evaluated settling velocities of two adjuvants (hydrated aluminum silicate and Colapis) obtaining a higher speed sedimented with the samples that were treated with hydrated aluminum silicate or bentonite. In the second stage, we used different concentrations of bentonite, preselected adjuvant between 5 g/hL and 12 g/hL and different vacuum pressures between -0.8 bar and -0.1 bar for filtration, here we found that our variables were not significant for the transmittance measurement, but instead the two interacting variables were significant in the filtration time, obtaining the best result with bentonite concentrations near to 12 g/hL and pressures close to -0.3 bar and -0.1 bar.
