The invention relates to a method for removing pesticide residues in capsicum oleoresin through molecular distillation, belonging to the technical field of deep processing of capsicum. The method comprises the following steps: (1) dilution and emulsification: adding a food-grade emulsifier into capsicum oleoresin and carrying out uniform mixing under stirring; (2) adding alkali lye into a mixture obtained in the step (1) so as to adjust the pH value of the system; (3) adding a mixture obtained in the step (2) into a molecular distillation preheating tank for preheating; (4) setting parameters of molecular distillation equipment; and (5) opening a feeding valve and carrying out molecular distillation operation so as to obtain a tertiary-distillation or fourth-distillation light phase, which is a capsicum oleoresin product. The method uses few facilities and is simple in process, low in cost and suitable for industrial large-scale production; and the method can remove a plurality of pesticide residues in the capsicum oleoresin, a removal rate is as high as 90% or above, and the yield of the pungency degree of the raw material capsicum oleoresin can reach 99% or above.
