This chapter reviews information on diseases associated with foodborne (meat- and fishborne) parasites, but also parasites disseminated in fecally contaminated food and water including etiologic agent, life cycle, symptoms, diagnosis, treatment, prevention, and control. Parasites covered are species of the genera Anisakis, Baylisascaris, Capillaria, Clonorchis, Cryptosporidium, Cyclospora, Diphyllobothrium, Fasciola, Giardia, Gnathostoma, Cystoisospora, Opisthorchis, Sarcocystis, Taenia, Toxocara, Toxoplasma, Trichinella, and others.
