The present invention provides a process for production of high quality collagen oligopeptide with skin or fish bones. Specific steps are as follows: the raw fish bone or skin after washing, with water after crushing and refining treatment by the weight mixing ratio of 20 ~ 1:5 sterilization, cooling, while adding a proteolytic enzyme and lactic acid bacteria after the first hydrolysis centrifugation, separated by filtration and the solid phase portion of unhydrolyzed hydrolyzate, the hydrolyzate was subjected to ultrafiltration using an ultrafiltration membrane, part of the mixed solution after separation of non-peptide molecules through the completion of the hydrolysis, and a solid phase unhydrolyzed after, while adding a protease and a second hydrolysis of the lactic acid bacteria, and isolated by centrifugation, ultrafiltration was filtered, ultra small molecule liquid oligopeptides and small molecules after the hydrolysis oligopeptides once collected sequentially through filters with after purification, sterilization, concentrated, and dried to give low molecular weight proteins oligopeptide product. The techniques of this invention can effectively improve the utilization of raw materials and product yield of the protein, a substantial increase in product quality.
