Effects of Sulphur and Nitrogen Combined Application on Kernel-Starch Characteristics in Wheat Varieties with Weak Gluten

The study investigated the effects of nitrogen and sulphur combined application on kernel starch of the wheat variety Yumai 50 with weak gluten under field circumstances.It was shown that nitrogen-sulphur interaction exerted significant influence on both the compositions and amylose-amylopectin ratio of kernel starch,nitrogen fertilizers significantly affected the peak,trough and final viscosities and breakdown of kernel starch and sulphur fertilization only exerted sginifcant influence on the breakdown and pasting temperature.The fertilization at 240 kg nitrogen and 20~60 sulphur per hectare could raise the contents of the total starch and amylopectin and reduced the content of amylose and the amylose-amylopectin ratio.The fertilization at 150 kg nitrogen and 20 kg sulphur per hectare could raise the peak,trough and final viscosities thus improving starch quality.
