Packaging and Shelf Life of Produce
2015
Recently, the demand for safe and high-quality foods, as well as changes in consumer preferences, has led to the development of innovative and novel approaches in food packaging technology. In order to choose a package capable to increase product shelf life, it is necessary to know the kinetics of food-detrimental phenomena and then select the proper material, above all, in terms of barrier properties. Nowadays the role of plastic packaging has turned into an active interaction with the product and the environment. The direct consequence of this change has been the development of active and intelligent packaging systems. Therefore, in this article three main issues of food packaging that are strictly related to food shelf life have been taken into account and properly discussed: the importance of mass transport properties of polymeric films to assure the desired shelf life, the latest advances of active systems, and the functionality of intelligent packaging solutions for produce.
