Extraction and Component Analysis of Protein with Latent Allergic Threat in Tropical Fruit

[Objective] The purpose was to explore the analysis method for the security evaluation of tropical fruit.[Method] According to the property of allergic protein,the proteins with latent allergic threat in 3 kinds of tropical fruits of mango,pineapple and papaya were abstracted,isolated and purified,and the detailed and systematic research on their amino acids component and content analyses were conducted.[Result] The contents of protein with latent allergic threat obtained after isolation and purification were 0.52% in mango,0.76% in pineapple and 0.83% in papaya resp.The amino acids component included aspartate,glutamate,serin,glycine,histidine,arginine,threonine,alanine,proline,tyrosine,valine,methionine,isoleucine,leucine,phenylalanine and lysine,and their ratio was 10∶20∶8∶12∶4∶3∶3∶7∶8∶2∶4∶1∶3∶7∶3∶5 in mango allergic protein,11∶18∶6∶12∶3∶5∶4∶9∶9∶2∶3∶2∶3∶6∶3∶4 in pineapple allergic protein and 13∶18∶8∶12∶1∶4∶4∶9∶8∶2∶4∶2∶3∶5∶4∶3 in papaya allergic protein.[Conclusion] The systematic research on the protein with latent allergic threat in tropical fruit was conducted in the experiment so as to provide an important reference for the security evaluation of tropical food.
