Study on the stability of natural pigment for Myrica rubra Steb et zucc.

The stability of red pigment,which were extracted from the Myrica rubra Steb et zucc.,was detected under different temperature,pH,sunlight and mediaeval conditions.The results show that the pigment can dissolve in water,the pigment could be stable under acidity conditions.Sunlight,oxidizing agent,reducing agent,some metallicion and strong alkali conditions could obviously effect the stability of the pigment.
